Thanksgiving Recipe Contest: Side Dishes!

We are receiving some great Thanksgiving Recipes for our PennySaverUSA.com Thanksgiving Recipe Contest! Great turkey, stuffing and dessert recipes along with some wild side dishes! Brett, our Content/Community guy,  is going to attempt one of these dishes tonight, and he is by no means in line for a Food Network show of his own, lets put it that way. Which one of these do you think he should make?

Scalloped Corn (submitted by Ranette J.)

1 can cream style corn
1 can whole kernel corn-don’t drain
1/2 cup melted butter
1 cup uncooked salad or elbow macaroni
1 cup Velveeta cheese

Put all in buttered casserole. Bake at 350 degrees for 1 hour stirring every 15 minutes. Double for more than 8 people.

This dish goes good with ham, turkey or prime rib. It’s easy and everyone wants seconds!!

Arizona Stuffing (submitted by John W.)

In a large deep skillet, saute 1/4 pound diced bacon in 2 tablespoons butter for 5 minutes; transfer to paper towels.

Season with salt and pepper and add 1 chopped onion, 3 chopped celery stalks, 1 diced jalapeno, 1 tablespoon thyme and 3/4 teaspoon chili powder; cook 5 minutes.

Pour in 3 cups chicken broth. Simmer until step 5.

In a large bowl, mix 2 eggs, 1 cup diced pepper jack cheese and the bacon.

Add to the bowl 8 cups toasted white bread cubes, 6 cups crumbled cornbread and the hot broth mixture.

Gently toss the stuffing, then spread in a buttered 9-by-13-inch baking dish. Dot the top with butter or turkey pan drippings, cover and bake 30 minutes at 350. Uncover and bake until golden, 20 more minutes.

Sweet Potato Souffle (submitted by Kathy C.)

3 cups hot mashed potatoes or yams
3 tbsp.butter
1 cup milk
1 tsp. salt
1/2 tsp.pepper
2 eggs (separated whites & yolks)
Add seasonings,butter, and milk to well mashed potatoes.When thoroughly blended, stir in beaten egg yolks;then fold in beaten egg whites.Turn into a lightly greased casserole dish. Cover completely with minature marshmellows.Bake at 350 degrees for 25-30 mins. until marshmallows are toasty brown.
